Welcome to user forum for all things Modernist cuisine. This should be your first place to come for assistance–or to share your successes and insights–when trying recipes and Modernist techniques. OfflineI recently became the new owner of a pretty large laboratory incubator. It has a stainless steel interior with a few racks, and heats anywhere from ambient to 70C. It appears to use a PID, as it holds temperature to .1C.
I'm considering using this for a 2nd go at fermenting garlic (currently occupying an insulated cooler with a heating element and temperature controller), but I'm looking for other good uses as well, since the capacity is quite large.
Other best-bets for fermentation in this temperature range? How about non-fermentation uses of an incubator?
