We have made a 20-page excerpt from Modernist Cuisine available for download. This section tells the story of the book and provides insight into why we created it and the philosophy that guided us in designing and writing it. The excerpt also discusses how we made the photographs and offers a few illustrations of the recipes to explain how our recipe formats work. We hope you enjoy it.

I’m so excited for the release. It will be months before I can actually afford it (well, more like JUSTIFY the purchase…), but I look forward to fondling it at my local B&N and perhaps reading some more excerpts.
Any plans for videos or an online supplement, similar to the Alinea Mosaic that accompanied the Alinea book?
It would be nice to have a condensed version that provides the average, non-professional cooking aficionado with the basic knowledge of refined cooking techniques that can be immediately deployed. The book is wonderful but cost-prohibitive for all but the professionals or the wealthiest of us.
For the cost of two meals (with wine) with my husband at a nice restaurant I can own a set of books that will help me learn to cook meals in my non-professional kitchen that could rival or surpass any local restaurant’s for the rest of my days. MC seems like a bargain if you look at it this way.
